シングルユーザモードで起動して menu.list を編集すれば直ると思われます。
シングルユーザモードへの移行は、
grub起動時に該当行で e を押下して行の最後に"スペース１->(  1 )を
入力、後にエンター、さらに b を押下です。

menu.list の変更点は、
[修正前]   kernel /vmlinuz ro root=LABEL=/1 NETWORKING_IPV6=no
[修正後]   kernel /vmlinuz ro root=LABEL=/  NETWORKING_IPV6=no
です。
試してみてください。

--> こののところ root=LABEL=/ にしてみては如何でしょう。
